  • 1.2 kilograms of ground pork
  • 1 tablespoon of coarse salt
  • ½ teaspoon of Prague powder #1
  • 1 teaspoon of sodium phosphate
  • ¼ cup of cold water
  • ¼ cup of TVP (Textured Vegetable Protein)
  • 1 tablespoon of Isolate
  • ½ teaspoon of Carrageenan
  • 2 tablespoons of sugar
  • 6 tablespoons of minced garlic
  • 2 tablespoons of paprika (for color)
  • 3 tablespoons of Anise Wine/Anisado Wine
  • 1 tablespoon of ground black pepper
  • 2 tablespoons of pineapple juice
  • ½ teaspoon of meat enhancer (optional)

b. How to Prepare

Step 1: In a large bowl that can fit inside your fridge, combine salt, Prague powder, phosphate, Anise liquor, and water.

Step 2: Add the Textured Vegetable Protein, Isolate, and Carrageenan.

Step 3: Next, add in the ground pork, sugar, garlic, paprika, ground black pepper, pineapple juice, and meat enhancer. Thoroughly mix with a large spoon or use plastic gloves to combine well with your hands.

Step 4: Let it marinate in the refrigerator for no more than 12 hours. (Note: Remember to keep track of the time as the mixture may turn sour if marinated for longer than the prescribed time in the recipe).

Step 5: Wrapping Longganisa: Shape the mixture into small round Longganisa and wrap each one. It is best to use sausage casings, but if unavailable, you can shape the mixture over wax or parchment paper.

Step 6: Once you’re done, the Longganisa is ready for frying. Enjoy your homemade Chorizo de Cebu!
